Honey-mustard roasted chickpea salad w. strawberry and asparagus

Matcha cashew fat balls (low sugar, high fat, healthy snack)

Okay I am just going to start by saying that this is far from the prettiest snack, I know that, but this is definitely a don’t judge a book by its cover kinda situation, because these mactcha fat balls are just so delicious, nourishing and filling – a must try!

I love to make a big batch of these to keep in my freezer so I always have healthy snacks on hand. They keep me from reaching for the less healthy options and they are absolutely perfect when I am strapped for time or on the go. Sometimes I like to mix it up and use different nut butters or add more superfoods for an extra kick, the options are pretty much endless with these – what would you add? I think I need to try an almond butter/maca combo soon, doesn’t that sound like a delicious combo?

Ingredients:
– Yields 8 fat balls 
1 deciliter (about 0.4 cup) cashews
1 deciliter (about 0.4 cup) shredded coconut
1 deciliter (about 0.4 cup) sunflower seeds
1 deciliter (about 0.4 cup) cashew butter
1/2 deciliter (about 0.2 cup) coconut oil
1 teaspoon pure vanilla powder
1-2 teaspoons matcha
5 pitted dates – optional

Directions:
Simply add all ingredients to a foodprocessor and pulse until you have a sticky cohesive dough (if the dough is too sticky to handle, then place it in the fridge for 30 minutes first). Roll the dough into 8 fat balls and place them in the fridge or freezer in an airtight container for about an hour to allow them to set. I prefer to keep them in the freezer as they keep for so much longer in there and don’t really need to thaw much more than a couple of minutes before serving, but you can store them in the fridge as well.
