Hazelnut fat balls a la Lee From America

Okay I am just going to start with saying that these are not in any way a very photogenic snack and I probably could have stepped it up a bit with the styling, BUT don’t hold that against them! These hazelnut flavored fat balls are one of my favorite new recipes and I have already made them twice in the past week. They are of course inspired by Lee From America and her famous fat balls – if you are not following her already, then hurry up and check out her blog or Instagram, she is such an inspiration to me! ♥

I love how these fat balls are such a delicious and filling snack that are full of healthy fats and plant based protein, but with a lot less sugar than bliss balls that are made with a base of dried fruit, which is fine in my book, but it is also something that you should eat in moderation. I did add a little bit of dates to these though, I created the recipe for my sister who is struggling a bit with getting enough calories after we have started going to the gym and I wasn’t sure that she would like them without just a little bit of sweetness, but you can easily leave out the dates if you’d like.

Ingredients:
– Yields 10 fat balls
1 deciliter (about 0.4 cup) almonds
1 deciliter (about 0.4 cup) sunflowerseeds
1 deciliter (about 0.4 cup) shredded coconut
1 teaspoon pure vanilla powder
2-4 teaspoons maca powder – optional
5 pitted dates – optional
1/2 deciliter (about 0.2 cup) melted coconut oil
1 deciliter hazelnut butter (other nut butters will work as well)

Directions:
Simply add all ingredients to a foodprocessor and pulse until you have a sticky cohesive dough. Roll the dough into 8-10 fat balls and place them in the fridge in an airtight container for about an hour to allow them to set. I prefer to keep them in the freezer as they don’t really need to thaw much more than 5 minutes before serving, but you can keep them in the fridge as well. They can keep for ages in the freezer though, so I am planning on making a big batch for my sister and I, so we will have snacks on hand for the next month.
