Healthified cookie dough bliss balls
Hello lovelies, I hope you are having an amazing weekend? I am not feeling too well so I am just relaxing on my couch with lots of tea, blankets and candles while watching Harry Potter and stuffing my face with these tasty cookie dough bliss balls. Haha if I wasn’t feeling ill this would pretty much be what a perfect evening looks like to me – yeess super geek over here ;)
I found the recipe for the cookie dough on Solveig’s blog Gluten Free Vegan Girl and I just love it so much that I had to share it with you guys. The cookie dough is so good that my chocolate hazelnut “nutella” balls have gotten some serious competition for the spot as my favorite healthified treat. I swear that they taste just like the cookie dough in the Ben & Jerry’s ice cream aka. pure perfection! These little cookie dough balls are however made from all healthy ingredients and depending on the chocolate you use they can easily be made vegan as well.
Ingredients:
1 cup cashews, unsalted
3/4 cup dates
1/2 teaspoon pure vanilla powder
1/4 teaspoon seasalt
1/4 cup dark 70% chocolate, chopped

Directions:
Start by placing the cashews, vanilla powder and sea salt in a food processor and pulse until the cashews have turned into flour. Then add in the dates and caramel essence and pulse until everything is well mixed and the dates have turned the mixture into a sticky dough. Use a spoon to scoop out the dough and place it in a bowl, add the chopped dark chocolate and mix well. Use your hands to roll the mixture into small balls and place them in a container lined with baking paper and place it in the freezer so the cookie dough can harden. And you are done, enjoy!
Note: I prefer to store the cookie dough in the freezer until just before serving to make them chewier.
