Evening lovelies, are you ready for this super colorful snack recipe?! ♥ I have been so excited to share these rainbow bliss balls with you guys, I just LOVE how the photos turned out, so colorful and vibrant! The bliss balls are of course so tasty as well and beyond easy to make with only 4 ingredients needed! Bliss balls are one of my favorites when it comes to making super easy snacks/treats that are healthy and only contains natural ingredients, but are still so yummy and able to satisfy my sweet tooth because of the sugar from the dried fruit.

And to give you a brief little overview, the bliss balls are:
Gluten-free
Dairy-free
Refined sugar-free
Vegan/plantbased (except from the bee pollen topping)
Full of fibre, vitamins and minerals

Ingredients – 12 bliss balls:
1 deciliter (equals about 0.4 cup) almonds
1 deciliter (equals about 0.4 cup) shredded coconut
1/2 teaspoon pure vanilla powder
12 dried figs

Toppings:
Green: pumpkin seed flour, matcha powder and chopped pistachios
Yellow: bee pollen
White: shredded coconut
Pink: beetroot powder, freeze dried raspberry and freeze dried strawberry
Purple: acai powder mixed with shredded coconut

Directions:
Start by adding the almonds and shredded coconut to a food processor and pulse until they are finely ground. Then add the rest of the ingredients and pulse until everything is well mixed and stick together. If necessary, add a little bit of water a tablespoon at a time to make the mixture stick together properly. Roll the mixture into 12 little bliss balls and coat them in your toppings of choice. They are ready to be served right away, but I prefer to allow them to set in the fridge or freezer for an hour or two before serving. Enjoy ♥
