Peppermint chocolate bliss balls – an easy Christmas treat

Hi lovelies, are you ready for some more Christmas treats? Or are you starting to get tired of them already? I am still all Christmas crazy and super excited for the upcoming holidays, so I am sorry but the Christmas recipes will keep coming – I promise to mix in some non-christmassy recipes as well though ;) Today I want to share the recipe for these delicious peppermint chocolate bliss balls with you, they’re made with all healthy ingredients and no refined sugar except for the crushed peppermint candy cane that I rolled some of them in, but that can of course easily be left out if you’d like. I really love how it adds a little crunch and some extra flavour though, so good!

Ingredients:
– Yields 8 bliss balls
2.5 deciliter (about 1 cup) almonds
4 tablespoons cacao powder
1 deciliter (about 0.4 cup) pitted dates
25 grams dark chocolate, chopped
2-3 tablespoons pure maple sirup
1 tablespoon coconut oil, melted
2 teaspoons peppermint extract*

*I couldn’t find pure peppermint oil, so I used a peppermint extract instead which isn’t very strong in flavor as you can tell by the quite large amounts used – make sure to adjust the amounts accordingly to whatever peppermint product you use. If you use a pure peppermint oil, then you should only use a couple of drops as it is extremely strong. Also, make sure to never ingest pure peppermint oil on its own, it can actually be toxic in larger amounts.

Directions:
Start by placing the almonds in a food processor and pulse until they have turned into flour – or you can leave them finely chopped if you’d like some texture.

Then add in the cacao powder and give it a quick blend before you add the rest of the ingredients and pulse until everything is well mixed and have turned into a cohesive, slightly sticky dough.

Use your hands to roll the mixture into small balls (I rolled mine in chopped dark chocolate and crushed peppermint candy canes), place the bliss balls in a container lined with baking paper and place it in the freezer (or the fridge) for at least an hour so they can firm up. And you are done, enjoy!
