Chocolate bliss balls with a peanut butter and almond core

It has been a while since I have shared a bliss balls recipe with you guys, so I thought it was about time since it is one of my all time favorite things to make and I can see that you love them just as much. These yummy chocolate bliss balls with a peanut butter and almond core are my newest creation and I think they will be my new go-to for a super indulgent and beyond delicious version of bliss balls!

As you know bliss balls are one of my favorite things to make for a super easy snack or treat. You can pretty much use whatever you have available (you need a good base like for example dates though), just add it to a food processor, pulse and roll it into balls – easy peasy! And you can choose to either keep it all healthy and nutritious or make it a bit more indulgent like these ones – I still consider them to be a healthier treat though.

These babies have a rich chocolate flavor with a creamy peanut butter core and some nice added crunch from the almonds, so yummy! Ah this will definitely not be the last time I have made these! I am currently enjoying a couple while watching Orange is the new black, I can’t believe it took me this long to get started on the new season, I am hook like always, haha I will probably be done with it tomorrow ;)

1/2 cup (equals 1 heaping deciliter) almonds

Directions:
Simply add the dates, almonds, vanilla powder and raw cacao powder to a food processor and pulse until you have a sticky dough. Scoop out a bit of the dough with a spoon, roll it into a ball and then press it flat. Place half an almond and bit of peanut butter in the middle and fold the sides over the middle to cover and enclose the peanut butter. Roll it into a ball again, but be careful not to squeeze out the peanut butter. Continue until you have used all the dough. Then roll the bliss balls in chopped dark chocolate and almonds until they are completely covered. I prefer to put them in the freezer or fridge to set, but you can serve them right away. Enjoy!

Store in an airtight container until serving , they will keep for about a week.
