Christmas morning treats // Chia jam berry buns + chocolate buns

Christmas is almost here and while I am so excited to celebrate with my family, then I am also a bit stressed out. The days have gone by so fast and even though I first thought I was ahead with work, buying (and making) gifts, baking, making decorations etc. then I have found myself to be running behind as usual – how come December days always feels so much shorter than the rest of the year?

Anyways, I know will make it in time for Christmas like I always do and the most important thing is to remember to enjoy it and not get too stressed out, so instead of putting too much pressure on myself, then I have found a couple of things on my to-do list where I can skip a few corners.

One of those things are baking treats for my family on the 25th. I had this whole big thing planned and it was already starting to stress me out a bit, so instead of baking this very elaborate cake from scratch, then I have decided to go for a much easier, but just as delicious solution.

Instead of baking the cake I will be making these yummy chia jam berry buns and chocolate buns with a base of Danerolles Croissants for a super easy and delicious treat that takes absolutely no time to put together – the dough is already done, you just need to pop open the can, add the filling, bake it and you are good to go! It does not get much easier than that! I am planning on making a big batch of the berry and chocolate buns on the 25th + maybe even the cinnamon bread as well, so that there will be lots of baked treats for brunch, but also leftovers that we can enjoy while watching Christmas movies in our Pjs ♥

Chia jam berry buns
225 grams frozen berries*
2 tablespoons honey
1/2 teaspoon pure vanilla powder
3 tablespoons chia seeds
1/2 deciliter water
2 cans of Danerolles Croissants

*I made two batches, one with raspberry and one with blueberry. Store-bought jam will work great as well.

Start by making the jam by simply adding the berries, honey, chia seeds and water to a saucepan and bring it to a slow boil. Let it simmer for a couple of minutes, mash the raspberries a little (you can give them a quick blend if you want the jam to be completely smooth), add the chia seeds and set it aside to cool. Store it in the fridge in an airtight jar, the jam is ready when the chia seeds have expanded and soaked up the excess liquid. This usually takes about 1/2 – 1 hour.

Open the can of Danerolles Croissants, roll out the dough, press the precut lines in the dough together and add a thin layer of the jam. Carefully roll the dough back together, cut it into 6 slices and place them on a baking tray lined with baking paper. Bake the buns in a preheated oven at 180 c // 360 f for 20 minutes until they are lightly golden and baked through. Serve the buns varm with lots of tea, enjoy ♥

Chocolate buns
100 grams dark 70% chocolate
4 tablespoons milk
1 can of Danerolles Croissants

Start by melting the chocolate, add in the milk and stir until you have a smooth chocolate spread. Open the can of Danerolles Croissants, roll out the dough, press the precut lines in the dough together and add the chocolate spread. Carefully roll the dough back together, cut it into 6 slices and place them on a baking tray lined with baking paper. Bake the buns in a preheated oven at 180 c // 360 f for 20 minutes until they are lightly golden and baked through. Serve the buns varm with lots of tea, enjoy ♥
