Easy Everyday Food // Chia pudding with chocolate granola and fall toppings

Good morning lovelies! It’s been a while since I last stopped by, I decided to completely pull the plug while I was traveling so I could just enjoy our time there and be 100% present. I will tell you much more about the trip soon, but for now I (finally) want to share one of the posts that I had pre-planned for you guys before I left.

It is time for a long overdue post in one of my favorite blog series – ‘Easy everyday food’ – where I share some of my go-to easy everyday meals with you guys. It is the kinds of meals that usually ends up saving the day when I am stressed, tired and strapped for time, so I hope you find some inspiration in them for those kinds of days as well.

I have shared chia pudding recipes many times before, but I wanted to share my current fall inspired favorite with you guys. It might look a little over-the-top and time consuming, but you can easily prep the chia pudding and granola beforehand, so it only takes a couple of minutes to put together in the morning – I usually make a big batch of chia pudding so I have enough for 3-4 days.

Chia pudding:
– Yields 1 serving
1 deciliter (about 0.4 cup) almond milk
2 tablespoons chia seeds
1/3 teaspoon pure vanilla powder
4 tablespoons greek yoghurt or plant-based yoghurt
A little stevia, maple syrup or whatever sweetener you prefer – optional

Simply mix everything together and let it set in the fridge overnight. Make sure to stir well before serving.

Toppings:
Chocolate granola – see recipe below
Crisp apple sliced or diced
Apple sauce
Almond butter
Bee pollen

Chocolate granola
1 tablespoon coconut oil
1/2 deciliter (about 0.2 cup) maple syrup
2 tablespoons almond butter
3 tablespoons kakao
1/2 teaspoon cinnamon
1/2 teaspoon pure vanilla powder
2 deciliter (about 0.8 cup) rolled oats
1 deciliter (about 0.4 cup) hazelnuts, roughly chopped
1 deciliter (about 0.4 cup) sunflower seeds
1 deciliter (about 0.4 cup) flaxseeds
1/2-1 deciliter (about 0.4-0.8 cup) chopped dark chocolate, I used one that is 70% cacao – optional

Directions:
Start by preheating your oven to 150 c / 300 f. Then add the coconut oil, maple syrup and almond butter to a saucepan on medium heat and stir until everything is well combined. Then add in the cacao, cinnamon and vanilla while stirring. Take the mixture off the heat and set it aside.

Add the rolled oats, nuts, and seeds to a bowl and pour the sticky mixture from the saucepan into the bowl while stirring until everything is covered. Pour everything onto a a tray lined with baking paper and bake the granola in the oven at 150 c / 300 f for 20-25 minutes (depends on your oven, keep and eye on it, so it doesn’t burn) – make sure to stir it 2-3 times to make sure it bakes evenly.

When it is done set it aside to cool before adding in the chocolate and pouring it into an airtight jar. Enjoy!
