Citrus salad with kale and lemon vinaigrette

Evening lovelies! Tonight I want to share one of my old favorites, a vibrant citrus salad with kale and lemon vinaigrette that have actually been posted here on the blog before, but with less than stellar photos and only in Danish, so I thought it was time for an updated (English) version.

The salad is one of my fall favorites, it is beyond delicious and bursting with flavor, it is full of nutrients and provides a much needed vitamin C boost (thank you scandi weather) and last but not least, it is just so vibrant and pretty! As you have probably noticed by now I really love colorful beautiful food ♥

Citrus salad with kale and lemon vinaigrette

Ingredients – 2 servings:
100 grams of kale
2 oranges, peeled and sliced
1 grapefruit, peeled and sliced
The seeds of 1/2 pomegranate
75 grams feta cheese
A handful pecans

Lemon vinaigrette
2 tablespoons olive oil
2 tablespoons applecider vinegar
1 1/2 spsk lemonjuice
Finely grated zest from 1/2 (organic) lemon
1/2 – 1 tablespoon honey
Salt + pepper

Citrus salad with kale and lemon vinaigrette

Directions:
Start by making the vinaigrette by simply adding all the ingredients to a bowl while throughly whisking until everything is well combined.

Wash and chop the kale. Add it to a bowl along with a tablespoon or two of the vinaigrette and massage the kale for a couple of minutes until it softens and the color changes to a deeper green.

Arrange the kale on a platter or in a bowl and top it with the sliced orange and grapefruit, the pomegranate seeds, the crumbled feta cheese and the pecans. Serve the salad with the vinaigrette on the side, enjoy! ♥
