Are you lovelies ready for a new favorite of mine? I have been making these beyond delicious edamame beans with miso dip so many times this past month that I cannot believe I haven’t shared the recipe with you guys yet! It is so easy to make and SO yummy! I mean you can pretty much put this miso dip on everything, haha at least that’s what I have been doing ;)

The edamame and miso are perfect to serve with another favorite of mine – homemade veggie quinoa sushi! I always feel like I am completely spoiling myself when I make this for dinner, but it is actually super easy and quite fast to make. This time I kept the sushi pretty simple with cucumber and avocado, but feel free to get creative!

Miso dip
4 tablespoons white miso paste
2 tablespoons sesame oil
The juice from 1/2 lime
1-2 tablespoons soy sauce
3 tablespoons toasted seame seeds

Edamame beans with miso dip and veggie quinoa sushi

Directions:
Start with making the miso dip by simply whisking the ingredients together until you have a creamy dipping sauce – adjust the flavors to your personal liking, I love it with 2 tablespoons of soy, but it might be a little too much for some. Then prepare the edamame by boiling the pods in slightly salted water (no lid on or they will loose their color), I only boil them for a couple of minutes to keep their texture. You can also steam them or simply add pour boiling water over them. Serve them warm edamame with the miso dip – either on the side or pour some of it onto the pods, enjoy!

Veggie quinoa sushi
Veggie sushi is one of my absolute favorites, it is so easy and inexpensive to make + without the raw fish you can make larger batches, so you have extra for lunch or dinner the following day!
