Breakfast parfait with raspberry and passion fruit

Hi lovelies! I am sorry about the lack of posts this week, I was sick all weekend last week + the beginning of this week and then when I finally got better I just had some many jobs and shoots that I needed to work on, so I was just too stressed to blog as well. I am about to make it up to you though, I have a whole bunch of recipes and other exciting posts planned for the next couple of days, so make sure to check in ;)

First up we have the super easy recipe for this delicious breakfast parfait with raspberry and passion fruit that I made this morning, it’s so yum! It might look a little complicated or time-consuming, but I actually made this in 5 minutes, so you should really give it a try – even if you do not have much time for breakfast :) I love a colorful, nutritious and delicious start to the day and this baby certainly does the job!

Ingredients:
1 cup frozen raspberries
1 banana
1 handful goji berries
A splash of almond milk
Skyr or greek yoghurt
2 passion fruits
A handful fresh raspberries
Muesli – homemade (recipe below) or store-bought

Directions:
Start by blending the raspberries, banana, goji berries and almond milk until smooth. Pour the smoothie into a big glass or jar and layer it with the passion fruit, add skyr or greek yoghurt onto the smoothie layer and top that with muesli (easy recipe below) and fresh raspberries, enjoy!

Homemade muesli
You can easily make your own muesli by simply adding rolled oats to a tray lined with baking paper and toast the oats for about 10 minutes on 180 c // 350 f. When the oats have cooled you can mix in your favorite muesli ingredients. I added chopped nuts, hemp seeds, chia seeds, raisins and dried mulberries to mine. Make a big batch so you have enough for a couple of weeks.
