Frozen yoghurt berry bars

We still have a crazy heatwave here in Denmark and I must admit that I am suffering a bit, I know I should not complain now that we finally have warm and sunny weather, but it is starting to be a bit too much for me – seriously, tropical nights when you do not have air-condition?! Haha I am not a fan! ..but enough with the whining, to deal with the hot weather I have been trying to come up with some new healthy snack ideas to cool me down and these little frozen berry yoghurt bars are definitely doing the job – they are so easy to make and they are not only tasty, but also healthy AND they are perfect to cool you down throughout the day, they can be a little messy to eat though ;)

To make these little frozen yoghurt berry bars I simply mixed plain skyr/greek yoghurt with stevia, a little acacia honey, pure vanilla powder and berries (black berries, blueberries, black and red currants and raspberries), added the mixture to a plastic container lined with organic plastic foil (or baking paper) and put it in the fridge overnight. When it was properly frozen I cut it into little bars and put it back into the freezer to snack on throughout the day, enjoy!
