Almond pancakes with berry sauce
I love trying new ways to make healthy pancakes and since I haven’t shared a new pancake recipe with you lovelies for a while I think it is time for another – I mean you can never really have too many pancake recipes right?! These almond pancakes are naturally sweet, full of protein and are more filling than any other pancakes I have tried, I hope you will like them as well!
Ingredients – yields 5 pancakes:
3/4 cup almond flour
1/4 cup almond milk
2 eggs
1/2 teaspoon pure vanilla powder
1/4 baking powder
A pinch of salt
Sweetener of choice – optional
Berry sauce:
1 cup berries
1/2 teaspoon pure vanilla powder
1 teaspoon honey
Directions:
- Add the almond flour, almond milk, eggs, vanilla powder, baking powder and salt to a bowl and whisk until everything is well mixed. You can add sweetener if you like, I skipped it because the almonds makes the pancakes naturally sweet, but I think I will add a little bit of acacia honey or liquid stevia to the batter to make them even sweeter the next time (haha in my world there is no such thing as too sweet). Let the pancake batter rest for 15-20 minutes to allow it to thicken a little. When I made these I was so hungry that I skipped this step and it makes it so much harder to get the pancakes thick and fluffy, so I would not recommend skipping it.
- Heat a non-stick pan – I prefer to make them on just above medium heat – and add a little coconut oil. When the oil has melted pour a circle of the pancake batter onto the pan, I used about 1/4 cup per pancake
- Cook the pancake for a couple of minutes until it is golden brown on the underside – flip it – and give it about a minute on the other side. The cooking time depends on how thick you make your pancakes
- I served the pancakes with berry sauce and fresh blueberries and black berries. To make the berry sauce simply heat a cup of berries (I used a mix of blueberries, currants, raspberries, blackberries and strawberries), 1/2 teaspoon pure vanilla powder and a teaspoon honey in a small sauce pan and let it boil on low heat until you have a thick berry sauce – I let it boil for about 10 minutes. You can add a little water if you want it to be thinner.
