Chocolate crunch granola
I love making my own granola and muesli and I am always trying new recipes and flavor combinations, it is so easy to make yourself and it not only saves you money, but homemade muesli/granola often taste much better than the store-bought ones and when you make it yourself you know exactly what is in it. This chocolate crunch granola is one of my favorite granola recipes at the moment, it is so tasty and super simple to make, but it is also a little indulgent so I like to call it my dessert granola even though I have been sneaky and enjoyed it for breakfast several times this week – haha I mean is there a better way to start your morning than with chocolate?! I think not ;)
Ingredients:
1.5 cup oats
1/4 cup hazelnuts, chopped
1/4 cup almonds, chopped
1-3 tablespoons cacao nibs
1 tablespoon cacao
1 teaspoon pure vanilla powder
3 tablespoons honey
1/4 cup chopped dark chocolate – I used one with 77 % cacao
Directions:
- In a bowl mix all the ingredients – except the honey and the chocolate – and set it aside.
- Melt the honey on a pan on little above medium heat and add the mixed ingredients from the bowl. Keep stirring until everything is coated in honey and lightly toasted, then allow the granola cool – I usually pour it onto a piece of baking paper. When the granola have cooled you can mix in the chopped chocolate.
- And you are done, enjoy! I served the chocolate crunch granola with skyr/greek yoghurt and fresh raspberries drizzled with acacia honey.
