Healthy lunch box ideas pt. 1
I have gotten quite a few requests for healthy lunch box ideas, so this will be the first of several posts dedicated to healthy lunches you can bring to school, uni, work or wherever you enjoy your lunch. I usually don’t bring lunch to uni myself since my apartment is only 2 minutes away, but I will try my best to come up with some healthy and tasty lunch box ideas for you. Haha and I’m the type who’s always hungry so it will probably be some big lunches, but you can of course always adjust the portion size and amount of food to your liking ;)
Whole wheat wrap with veggies and red bell pepper hummus
I made these veggie wraps using store bought whole wheat wraps filled with veggies (spinach, cucumber, red pepper, carrot and edamame beans) and red bell pepper hummus. I used this recipe to make the hummus, but I only used 1 tablespoon oil and 1 tablespoon tahini, except for that I just followed the recipe and it turned out so good!

Homemade trail mix
I love to bring trail mix to snack on, this combo was almonds, raw unsalted cashews, goji berries, pumpkin seeds, sunflower seeds, raisins and dried apricots. You can buy premixed trail mix, but if you make your own it is usually much cheaper and you get exactly the combo you want + you’re sure that there isn’t added any hidden salt, sugar or processed stuff.
