Just like the raw mini tarts recipe that I shared on Saturday this delicious recipe have previously only been posted in Danish (you can still find it in Danish right here!), but today the recipe will finally be up on the blog in English as well and I even found the time to update the photos! Haha which was pretty much just an excuse for me to make these beyond delicious chocolate covered date caramel bites again ;)

Have any of you guys tried these? I cannot recommend them enough, the sweet and gooey caramel goes perfectly with the rich and crunchy chocolate – I wish I could always have a batch of these babies on hand!

Chocolate covered date caramel bites with peanut butter
Ingredients – 10 dessert balls:
12 dates, pitted
3 tablespoons smooth peanut butter
1/2 teaspoon pure vanilla powder – buy it right here!
1/4 teaspoon sea salt
1/2 – 1 teaspoon maca (buy it right here) – optional

100 grams dark chocolate, I used one with 70% cacao

Directions:
Simply add everything except the dark chocolate to a food processor and pulse until smooth. Then shape the peanut butter date caramel into 10 little dessert balls and place them in the freezer to set while you melt the chocolate – if the date caramel is too sticky and difficult to work with then put it in the freezer for 10 minutes and try again.
I melted the chocolate in a warm water bath by simply placing it in a bowl (preferably a metal bowl) and then placing that bowl into another (bigger) bowl that is filled with warm water. You can also melt it in the microwave, over a double broiler or simply in a saucepan. Coat the dessert balls in the dark chocolate (I like to dip them a couple of times for a thick and crunchy chocolate layer) and let them rest in the fridge or freezer while the chocolate sets, enjoy!
